What Does All Day Mean In Cooking

The phrase "all day"

I've been hearing this phrase used more frequently from chefs on cooking shows. "I need three trout all day!" Urban dictionary says it means "in total" as in how many are needed right now. But other chefs seem to use it like medical people use "stat!" Any insight from folks actually in the kitchen?

I use "all day" to mean in total. The board is full of tickets and I'm adding items up for a station: "And, another scampi; that's 3 all day."

I use "on the fly," to mean get me this as fast as you can. "I need 3 orders of veg on the fly!"

also useful when you are down to the last few somethings, or when they take a while to prepare and you want to have everything ready at once. like a boss.

also, "walking in" for item just came in on a ticket.

All day means total needed on all tickets at this current time. For "stat" you would hear "on the fly" or "flying."

(ie. I need three trout all day, one flying.)

i.e. You made a common mistake, and I kind of feel like a douche for pointing it out.

We use all day to indicate the sum or total. It can be coming in or going out. "I need three bisque all day." "86 the special after this order, I only have one all day."

Interesting note, here in Israel they say the phrase כל היום in Hebrew in kitchens as well. Its as literal a translation as you can get.

Mostly Israeli cooks just use it to add up the ticket orders when the board is full. I hear it a lot a falafel and shwarma stands here because they don't write tickets. For them its a way to keep it all straight when the crowd is bearing down.

Dragging: table is ready, waiting on that item

I hate the term "Dragging" because it makes the cooks feel like they're not working hard enough, like "You're dragging your ass." I prefer the term Holding. "Picking up 53, holding on sirloin, mid-rare." My owner's wife likes to play FoH Expo from time to time and she's always yelling that something is DRAGGING. You're DRAGGING on this filet, you're DRAGGING on this ahi tuna. Come on lady, you don't get to talk to me like that because your husband signs my paycheck.
